The Holidays are officially over and that includes all the rich foods we have all been eating, the cookies and the Christmas candies have all finally disappeared. Thank goodness! So now it’s time to get back to the basics and eating a little healthier. I know this is an older casserole recipe, but it is a goodie so thought I would share it this week. It makes a lot, so this is a good one for a potluck or if you have extras for a meal. Try it. I think you will really like it. This is not a quick one to assemble so give yourself a little extra time.
So, there’s this belief out in the universe that life begins at 40. With exactly two months to go in my 30s, I thought it might be time to reflect on my life and plan for the future.
Clay County Quorum Court met in regular session for the first meeting of the year on Tuesday, Jan. 17 at the courthouse in Piggott. This was the first meeting for newly elected members, Randy Kingston, George Lowe, Neal Smith, other justices present were Patrick Patterson, Dennis Haines, David Hatcher and Jody Henderson. Absent was David Cagle and newly elected Brad Green.
Amanda Wiedman presented the certificates to the winners at our January Chamber Luncheon. Martin Ahrent & Sons was also awarded a certificate but was unable to attend the luncheon.
Response to the Clay County History Book has been good with more than several dozen family histories already received. The Clay County Genealogical and Historical Society would like to thank all those who have responded so promptly to record their family’s heritage in this historic book.

IOWA CITY, IA (01/19/2023)-- Toby Hollis of Rector, AR was among the more than 7,500 undergraduate students at the University of Iowa named to the dean’s list for the 2022 fall semester. Hollis is a third year student in Iowa’s College of Liberal Arts and Sciences and is majoring in Computer Science.
SEARCY, AR (01/19/2023)-- Jennifer Little, a Senior, studying elementary education, is among more than 1,200 Harding University students included on the dean’s list for grades achieved during the fall 2022 semester.
Corning City Council meets second Monday of each month, 6:00 p.m., in City Hall. Clay County Quorum Court, Third Monday each month, 7:00 p.m., alternating between Corning and Piggott courthouses.
