SPINACH DIP: 1 small onion 2 cans Rotel, drained 2 pkgs. frozen chopped spinach, drained 2 (8oz.) cream cheese 6-8 oz. Parmesan cheese, grated (8oz.) Monterey cheese, grated cumin, chili powder, garlic, all to taste Preheat oven to 325 degrees. Mix ingredients and pour into a lightly greased 9 X 13-inch pan. Bake for 25-30 minutes, until the cheese is completely melted.
